If you are like many family caregivers, making sure that your senior gets the nutrition that he needs on a regular basis means relying on the same basic rotation of meals and snacks that you know he enjoys and that offers a balance of nutrients. While this is a good way to make sure that he is eating well, it can get extremely boring. Shaking up your usual meal routine every now and then keeps your care efforts interesting, supports a healthy appetite for your senior, and presents opportunities for you to interact and share more with him as you explore new flavors together.

This recipe is for a delicious twist on the classic buffalo chicken sandwich that people love, but that has a tremendous amount of fat and calories. Instead, this vegan version uses chickpeas in place of the chicken and hummus in place of the fatty dressing for a much leaner, protein and dietary fiber-packed version that is not at all light on taste.

 

What You Will Need

  • 4 flour tortillas, pitas or flatbread
  • 1/2 of a cup to 2 tablespoons of hummus
  • 1 and 1/2 to 2 tablespoons of maple syrup, plus extra to taste
  • 1 small lemon
  • Hot water
  • 1 head of romaine lettuce or 1 bundle of kale
  • 1 fifteen ounce can of chickpeas
  • 1 tablespoon of coconut oil, or olive oil
  • 4 tablespoons of hot sauce, divided
  • 1/4 of a teaspoon of garlic powder
  • A pinch of sea salt
  • 1/4 of a cup of red onion
  • 1/4 of a cup of baby tomato
  • 1/4 of a cup of ripe avocado
  • A sharp knife
  • A cutting board
  • A mixing bowl
  • A whisk
  • A large mixing bowl
  • A cast iron skillet
  • A spoon

 

What to Do

  • Use the sharp knife to roughly chop the lettuce or kale and set aside
  • Rinse, drain and then dry the chickpeas and then set aside
  • Dice the red onion and set aside
  • Dice the baby tomato and set aside
  • Thinly slice the avocado and set aside
  • In the regular mixing bowl, add the hummus, lemon juice and maple syrup together
  • Whisk to combine thoroughly
  • Add the hot water to the mixture until it has become thick, but still pours easily
  • Taste to adjust the flavor as needed
  • Add the romaine or kale to the mixing bowl
  • Toss to coat
  • Set aside
  • Add the drained chickpeas to the large mixing bowl
  • Add the coconut oil to the chickpeas and toss to coat
  • Add 3 tablespoons of the hot sauce to the chickpeas and oil
  • Add the garlic powder and the salt to the chickpeas
  • Toss to coat
  • Place the cast iron skillet on medium heat
  • When hot, add the chickpeas to the skillet
  • Saute the chickpeas for 3-5 minutes
  • Mash a few of the chickpeas to create texture
  • When the chickpeas are hot and begin to dry out, remove them from the heat
  • Add the remaining tablespoon of hot sauce to the chickpeas
  • Stir the hot sauce in to combine and set aside
  • Top each wrap with a generous portion of the salad
  • Top the salad with 1/4 of a cup of the buffalo chickpeas
  • Add a sprinkle of the diced tomatoes, avocado and onion to the top
  • Roll the wraps up and serve hot
